In particular, cross-contamination involving raw food and ready-to-eat food needs to be avoided so that the public are not at risk of getting things like food poisoning caused by the transfer of bacteria. Your business is not going to want to be faced with being sued by a customer as they believe their illness was caused by you as the pay-out, if found guilty, could be significant and your business could do without any bad publicity.
You cannot afford to just give the food preparation area a quick wipe over with a damp cloth. That will not provide a satisfactory level of cleanliness.
Therefore, an option is that a two stage cleaning process is used. By utilising stage 1 & stage 2 cleans you are going to have a through system in place to reduce the likelihood of any of your customers becoming ill through food poisoning.
So, let’s have a look at what these two stages involve: –
In the first instance, you should remove any food waste from surfaces such as work-surfaces, sinks, cookers and walls. The next thing to do is to spray a suitable cleaning product onto the area that is to be cleaned. Leave the product for a while to start to do its job and then wipe clean with paper towels or a clean cloth.
You should spray a suitable sanitiser/disinfectant onto the area that you have just cleaned. Leave it for the time the manufacturer recommends. Then simply rinse the area using clean water or, instead, use a wet cloth. You can either leave the surface to dry naturally or use paper towels.
